How's that for a return to blogging? As I've admitted before, my preteen and high school/college diaries are full of starts and stops, so it's only fitting that the pattern continue with blogging. But, yes, I made a chicken, and I'm a dork, so I'm going to tell you about it. A full sized (almost 5 pound) chicken
all by myself. Those of you who know me well know what a feat this is. The hubs is the
cook, I usually just bake and find the recipes that he executes so well. I've been sucked into Pinterest, and can't get enough of all of the crazy good ideas out there, and am always looking for new ideas for dinner. During the work week, it's typically quick and easy, but I feel obligated to be a little more fancy when I'm on Spring Break or home for the summer. **I also have to note that we took a "chicken break" after watching Food, Inc, but have since incorporated it back into rotation. (Boneless, skinless chicken breast still grosses me out!)** When I saw
this recipe on one of my favorite blogs, I added a chicken to the good old TJ's shopping list. I was pleasantly surprised to find that a whole chicken only cost around $6, too. Who knew?! Today was the day. I got my big girl pants on, pulled out the (gag) giblets (anyone know why they're called that?) and made, if I must say so myself, a prettty damn good roast chicken, complete with carrots and red potatoes. Kieksy asked for thirds, so it must have been good. It was also ridiculously easy, if you have the time to cook a chicken. And can I talk for a moment about the crispy skin? Oh, my, God, I've been missing skin on chicken for so long! (I feel like I may be making any vegetarian readers sick right now, so I apologize...) Of course, a food blogger I am not, so the thing was dissected before I could snap a picture. Oh well.
